Gin obtained an elegant copper color during aging in Rudd Mt. Veeder Cabernet barrels. Nose has a full toffee, caramel sweetness with hints of spice. Initial taste is sweet and full with a hint of citrus, spice and subtle wine notes. Mid palate is where you find the only true remnants of gin with juniper, cardamom and the rose-like coriander resting in the background. The finish is quite long, sweet and surprising spice filled with cassia, clove, ginger and black pepper. At the very end there are chocolate and oak notes. This is a truly unique spirit that transcends gin with a combination of characteristics more often found in bourbon, cognac and even rum. This would make a stunning old fashioned, Manhattan or Negroni.
